For Design Frontiers class, I tried sperification of foods. I used Sodium Alginate, Calcium Chloride and Calcium Lactate Gluconate, and tried both sperification and reverse-sperification, with Root, a liquour, water, tomato juice, milk, and olive oil. I was really only successfull with the water and tomato juice, probably because I failed to use purified water for my water-bath. I'd like to try this again in a more controlled environment.
